Application: Used in Yeast Manufacturing, candies, confectionaries, bakeries, cake mixes, candies, pudding, cake fillings, ice creams, coffee creamers, whipped oil products and icing.
SMS and Polyoxyethylene Sorbitan Mono Stearate are used in combination for making significant improvements in cake quality. Also frequently used in baking in combination with other mono and Di-glycerides.
In particular SMS is used to prevent chocolate from developing an unattractive colour when it is repeatedly heated and cooled. SMS also improves the gloss or shine of chocolate products. SMS inhibits migration of fat retarding ‘BLOOM’ and there by extending the shelf life of Confectionaries. The surfactants ability to retard ‘BLOOM’ is derived from its power to entrap fat by absorption.
